Ingredients:

  • 2 lb potatoes, cut as desired
  • 3 tsp sabzi masala
  • 1 tsp salt
  • 3 tbsp oil of your choice
  • ⅓ stick of butter, melted
  • 3 bay leaves
  • 1 tsp crushed pepper
  • ¼ cup finely chopped cilantro (for topping)

Directions:

  • Preheat the oven to 425 degrees Fahrenheit.
  • Peel and cut potatoes into wedges or pieces.
  • Soak the potatoes in water until the sabzi masala is ready.
  • Cut bay leaves into ½” pieces. Heat oil in a small pan, add sabzi masala and fry for about a minute. Add bay leaves and cook until they turn brown. Remove from heat and let cool.
  • Drain potatoes and transfer to a mixing bowl. Add sabzi masala, and bay leaves, and mix well.
  • Line a baking dish with parchment paper if necessary. Place potatoes in the dish and drizzle with melted butter.
  • Bake uncovered at 425 degrees for 30-40 minutes or until done. Broil for a few minutes, watching closely to avoid burning.
  • Garnish with cilantro and serve.

Note: For Category 3 Expedition Spice Blends, omit bay leaves and use parsley instead of cilantro. Optional additions include pre-cooked chicken breast or cheese, added before the final baking phase.
