Ingredients:

  • 2 lb sea scallops
  • 3 tbsp oil
  • 1 tbsp hari mirch masala
  • ¼ tsp brown sugar
  • ¼ cup chopped green onion

Directions:

  1. Wash and pat dry the scallops.
  2. Mix hari mirch masala with 2 tsp water and brown sugar to make a paste.
  3. In a bowl, combine scallops with the paste and mix well; marinate for 30 minutes.
  4. Heat a non-stick pan and add oil.
  5. When hot, add scallops in a single layer and sear for 2-3 minutes on each side. Repeat until all scallops are cooked, adding more oil between batches if needed.
  6. Once done, sprinkle with green onions and serve with tamarind sauce or your preferred sauce.
  7. I like to serve mine with tamarind chutney, hummus, and freshly baked pita chips. Cut pita bread into triangles, spray with oil, sprinkle with homemade flavored salt, and bake at 350°F for 10-12 minutes until crispy.
  8. Enjoy the scallops with any side dish or salad and your favorite sauce or chutney.
