When it comes to Indian cuisine, whole spices are the secret ingredients that bring dishes to life. Recently, I decided to host a dinner party and wanted to show the incredible versatility of these spices in both rice and curries. What unfolded was a culinary journey that wowed my guests and deepened my appreciation for the rich flavors that single spices can deliver.

I decided to create a fusion from the various spices that have delighted us for centuries from the  Indian subcontinent blended with  Western flavors. Using single whole spices, like cumin, black stone flower, whole long pepper black cumin Coriander, and other spices  to bring each dish to life was an unforgettable experience. I started with two rice dishes and a hearty curry, each highlighting the unique characteristics of these powerful ingredients.

First up was a dish that’s become my personal favorite – sweet peppery rice. By adding dried bell pepper bits to the rice, I introduced a subtle sweetness and a gentle peppery kick that took everyone by surprise. The dried bell peppers, with their vibrant color and flavor, transformed plain rice into a delightful dish. As my guests took their first bites, the looks of pleasant surprise and satisfaction were all I needed to know I had made the right choice. Next, I wanted to show how traditional biryani masala can enhance a simple rice dish. Biryani masala is a fragrant blend of spices, black  cumin (Aka shahi zeera), bay leaves, cinnamon buds, green cardamom and cloves.  As the rice cooked, the masala released its aromatic oils, infusing every grain with deep, complex flavors. This wasn’t just rice – it was a celebration of spice, warmth, and tradition. The biryani-inspired rice paired beautifully with the rest of the meal, adding a rich, savory component that everyone loved.

For the main course, I wanted to create a curry that blended the best of Indian and Western culinary traditions. I started by heating some oil in a pan and adding whole spices like ground mustard and cumin seeds. As they sizzled and popped, the kitchen filled with an intoxicating aroma that promised something special. Next, I added finely chopped onions, garlic, and ginger paste,  cooking them until they turned a rich, golden brown.

For the curry base, I used ripe tomatoes, creamy yogurt, and a mix of ground cubeb pepper, coriander, and whole long pepper. One of the star spices in this curry was black stone flower – a unique ingredient that added an earthy, smoky flavor, enhancing the complexity of the dish. As the curry simmered, the spices blended together, creating a rich, flavorful sauce that was both comforting and exciting. ( you can add any type of meat or vegetable you like to this dish but we  added cubed  chicken breast).

When everything was ready, I served the sweet peppery rice and the biryani masala rice alongside the aromatic chicken curry along with a few other traditional favorites. My guests were amazed at the explosion of flavors, each dish highlighting the beauty and versatility of single whole spices. The fusion of Indian, and Western influences made the meal unique and memorable, showcasing how spices can transform simple ingredients into extraordinary culinary experiences.

That night, I realized the joy of experimenting with whole spices in both rice and curries. It’s incredible how these humble ingredients can elevate everyday dishes, making them extraordinary. From the sweet peppery taste of dried bell peppers in rice to the rich, aromatic flavors of biryani masala and the smoky notes of black stone flower in curry, each spice brought its own magic to the table.
